Sophie Gray's Mexican Meal Kit
Sophie Gray of Destitute Gourmet and manager of The Good Works Trust Foodbank has given The Salvation Army permission to use three recipe kits she has developed. These are designed to be filling and nutritious for a family meal. Also, very easy to cook, versatile, and tastes so good!

In a frying pan or saucepan cook the mince – pressing with a masher or fork till crumbly and evenly browned.
Stir in the chopped onion and cook over a medium heat until soft.
Stir in the Mexican Seasoning, chopped tomatoes, beef stock, water, both cans of beans and the tomato sauce. Mix well.
Simmer gently and as the mixture cooks begin to mash in the beans using a fork. Mash ½ to ¾ of the beans so the mixture is thick and chunky. Season with salt to taste
Serve with cooked rice or wraps and salad. Try in toasties or stuffed into a jacket potato. Pile onto nachos or serve on top of oven baked potato wedges
TIP : Substitute diced chicken or other meat in place of the mince, or try it vegetarian by removing the meat.
