- Preheat the oven to 180°C (160°C fan-forced). To make the chips, place the cut wraps onto an oven tray and bake for 15 minutes or until crispy.
- Heat the oil in a frying pan to medium heat. Add the onion, cooking for 4 minutes until softened.
- Stir through the seasoning, tomatoes, beans, corn and sugar, bringing to a simmer for 10 minutes until thickened. Season with salt and pepper and stir through half the coriander.
- Arrange the chips and vegetable mix in an oven-proof dish. Sprinkle with cheese and place into the oven for 5 minutes to melt the cheese.
Recipe Note
You can add Avocado and sour cream if you wish.
